Chef Marcell prepares Pork Chops with Charro Beans

Pork Chop with Quick Charro Beans

Ingredients:

2 pork chop

garlic powder, to taste

salt & fresh ground pepper, to taste

chipotle powder, to taste

paprika, to taste

2 tablespoons olive oil

1 can pinto beans

1 serrano pepper, sliced thin

1 1/2 ounces smoked bacon, finely diced

5 scallions, sliced

1 tomato, finely chopped

5 cilantro sprigs, finely chopped

salt & fresh ground pepper

Directions:

1. In a heavy bottomed sauce-pan over medium-low heat, place the beans, serrano, bacon, scallions, and tomato.

Keep an eye on it, when it starts to boil, gently stir and reduce heat. Add cilantro salt and pepper to taste.

2. In the mean time, season pork chops with all the seasonings on one side and just salt and pepper on the other side.

3. in a heavy sauté pan over medium-high heat, sauté the pork chops in olive oil until browned.

Do not allow them to curl or else the other side will not cook evenly.

4. Reduce the heat to medium and carefully turn the chops. Be careful as to not let the seasoned side get too dark !

When nicely colored, turn them back to the other side to finish cooking to the desired doneness.
